Ingredients

  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 0.5 teaspoon turmeric
  • 0.5 teaspoon cinnamon
  • 14.5 ounce can diced tomatoes
  • 1 cup chicken broth
  • 3 cups fresh spinach
  • 0.25 cup fresh cilantro
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Dice the chicken breast into 1-inch cubes and season with 1/2 teaspoon of salt and ground black pepper.

Step 2

Peel the sweet potatoes and cut them into 1-inch cubes.

Step 3

Finely chop the onion and mince the garlic cloves.

Step 4

Peel and grate the ginger.

In a large pot, heat the olive oil over medium-high heat.
