Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin using a little olive oil.

In a medium-sized skillet, heat 1 teaspoon of olive oil over medium heat. Add the chopped red onion and sauté for about 2-3 minutes until soft.
