Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 3 tablespoons Extra virgin olive oil
  • 3 tablespoons Lemon juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 6 cups Romaine lettuce, chopped
  • 0.5 cup Kalamata olives, sliced
  • 0.5 cup Sundried tomatoes, chopped
  • 3 fillets Anchovy fillets, minced
  • 0.5 cup Parmesan cheese, shaved
  • 1 cup Whole grain croutons

Directions

Step 1

In a medium bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 minced garlic clove, salt, and pepper.

Step 2

Place the chicken breasts in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 15 minutes.

Step 3

While the chicken is marinating, prepare the salad. In a large serving bowl, combine the chopped romaine lettuce, sliced olives, and chopped sundried tomatoes.

Step 6

Remove the chicken from the grill and let it rest for a few minutes. Slice the chicken into strips.

Step 7

Toss the salad with the dressing, ensuring all ingredients are well-coated.

Step 8

Top the salad with grilled chicken strips, shaved Parmesan cheese, and croutons.

Step 9
