Ingredients

  • 4 pieces Whole wheat tortillas
  • 4 large Eggs
  • 2 tablespoons Extra virgin olive oil
  • 1 medium Red bell pepper
  • 1 cup Cherry tomatoes
  • 2 cups Baby spinach
  • 1 cup Feta cheese
  • 0.5 medium Red onion
  • 2 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 large Avocado

Directions

Step 1

Dice the red bell pepper and red onion, mince the garlic, and halve the cherry tomatoes.

Step 2

Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the diced red bell pepper and red onion and sauté for 3-4 minutes until softened.

Step 3

Add minced garlic and cook for an additional minute, then add cherry tomatoes and baby spinach. Stir and cook for another 2-3 minutes, until the spinach is wilted and the tomatoes are slightly softened. Remove from pan and set aside.

In a medium bowl, beat the eggs, and then season with salt and black pepper.
