  • 0.5 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons unsweetened almond milk
  • 4 wedges lemon wedges
  • 4 cups baby spinach
  • 1 cup cherry tomatoes, halved

Directions

Step 1

Preheat your oven to 375°F (190°C) and prepare a baking sheet by brushing it lightly with 1 tablespoon of olive oil.

In a small bowl, combine lemon zest and minced garlic. Set aside.
