  • 2 medium Tomatoes, diced
  • 1 medium Red bell pepper, sliced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 leaf Bay leaf
  • 2 cups Vegetable broth
  • 1 tablespoon Red wine vinegar
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the sliced onion and cook for about 5 minutes, until they begin to soften.
