  • 500 grams beef tips
  • 2 tablespoons olive oil
  • 1 medium, chopped onion

  • 2 medium, sliced carrot
  • 1 large, chopped red bell pepper
  • 400 grams canned chopped tomatoes
  • 250 milliliters beef or vegetable broth
  • 125 milliliters red wine
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat.

Step 2

Add the beef tips and brown them on all sides, about 6-8 minutes. Remove the beef from the pot and set aside.

In the same pot, add the chopped onion and sauté until translucent, approximately 4-5 minutes.
