Ingredients

  • 200 g bitterleaf greens
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion
  • 3 units garlic cloves
  • 200 g cherry tomatoes
  • 1 liter vegetable broth
  • 400 g chickpeas
  • 1 medium red bell pepper
  • 1 teaspoon cumin powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 10 g fresh parsley
  • 2 tablespoons lemon juice

Directions

Step 1

Start by thoroughly washing the bitterleaf greens. Once washed, soak them in warm water for about 5 minutes to lessen the bitterness.

Step 2

While the greens are soaking, dice the onion and mince the garlic cloves. Halve the cherry tomatoes and dice the red bell pepper.

Step 3

In a large pot, heat the extra virgin olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

Add the minced garlic, cherry tomatoes, and diced red bell pepper to the pot. Cook for another 5 minutes until the peppers start to soften.
