  • 0.5 cup sago pearls
  • 400 ml coconut milk
  • 2 cups water
  • 2 tablespoons extra virgin olive oil
  • 0.5 cup, chopped dried figs
  • 0.25 cup, chopped walnuts
  • 2 tablespoons date syrup
  • 0.25 teaspoon sea salt
  • 1 teaspoon vanilla extract

Directions

Step 1

Begin by preparing the sago pearls according to package instructions. Typically, this involves boiling them in water until they are translucent. Drain and set aside.

Step 2

In a large pot over medium heat, add the coconut milk and water. Stir in the extra virgin olive oil and bring to a gentle simmer.

Add the sweet potatoes, taro root, and purple yam to the pot. Allow to cook for 10 minutes, stirring occasionally.
