Ingredients

  • 2 tablespoons Olive oil
  • 500 grams Lean chicken breast
  • 1 large Onion
  • 3 units Garlic cloves
  • 400 grams Green cabbage
  • 1 medium Red bell pepper
  • 2 medium Carrots
  • 4 medium Tomatoes
  • 100 grams Dried prunes
  • 2 units Bay leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 500 milliliters Chicken broth
  • 2 tablespoons Fresh parsley

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium heat.

Step 2

Cut the chicken breast into bite-sized pieces and add them to the pot. Cook until browned on all sides. Remove the chicken and set aside.

Step 3

Add the remaining tablespoon of olive oil to the pot. Finely chop the onion and garlic cloves and sauté for about 3 minutes until the onion is translucent.

Step 4

Chop the cabbage into thin strips, dice the red bell pepper, and slice the carrots. Add these vegetables to the pot and cook for another 5-7 minutes.

Step 5

Dice the tomatoes and chop the dried prunes. Add them to the pot along with the bay leaves, dried thyme, paprika, salt, and black pepper. Stir to combine.

Step 6

Return the chicken to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low and cover.

Allow the stew to simmer for 1 hour, stirring occasionally to prevent sticking.

After 1 hour, remove the lid and let it simmer for an additional 15-20 minutes to thicken the stew.

Adjust the seasoning with more salt and pepper if needed.
