Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 1 cup brown rice or quinoa
  • 2 cups baby spinach
  • 1 medium red bell pepper
  • 1 medium zucchini
  • 1 large carrot
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup feta cheese
  • 0.25 cup fresh parsley
  • 1 tablespoon sriracha (optional)

Directions

Step 1

Cook 1 cup of brown rice or quinoa according to the package instructions and set aside.

Step 2

Slice the chicken breasts into thin strips. Mince the garlic cloves.

Step 3

In a small bowl, mix 1 tablespoon of olive oil, minced garlic, 1 tablespoon of lemon juice, oregano, salt, and black pepper.

Marinate the chicken strips in the mixture for at least 15 minutes.
