Ingredients

  • 1 cup gram flour (besan)
  • 0.75 cup water
  • 2 tablespoons olive oil, divided
  • 1 medium tomato, finely chopped
  • 1 small red onion, finely chopped
  • 1 cup spinach, finely chopped
  • 2 tablespoons parsley, finely chopped
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

In a large mixing bowl, combine gram flour, water, salt, turmeric powder, red chili powder, black pepper, and lemon juice. Whisk until you achieve a smooth, lump-free batter.

Step 2

Add finely chopped tomato, onion, spinach, parsley, and cumin seeds to the batter. Stir well to combine all ingredients.

Step 3

Heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil.

Step 4

Pour a ladle of the batter onto the skillet and spread it gently in a circular motion to form a thin pancake.

Step 5

Cook the cheela for about 3-4 minutes on medium heat until edges start to lift and the bottom turns golden brown.

Step 6

Drizzle a few drops of olive oil around the edges, then flip the cheela using a spatula. Cook the other side for an additional 2-3 minutes until golden brown.

Step 7

Repeat the process for the remaining batter, adding more olive oil as needed for each cheela.

Step 8

Serve hot with a side of yogurt or a tangy tomato salsa.
