Ingredients

  • 4 medium-sized fresh beetroots
  • 1 small red onion
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh mint
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by preheating your oven to 400°F (200°C).

Step 2

Thoroughly rinse and scrub the beetroots to remove any dirt. Do not peel them.

Step 3

Wrap each beetroot individually in aluminum foil and place them on a baking sheet.

Step 4

Roast the beetroots in the preheated oven for 35-40 minutes, or until they are tender enough to be pierced with a fork.

While the beetroots are roasting, finely chop the red onion and set aside.
