  • 14 ounces Canned diced tomatoes
  • 2 cups Beef broth
  • 3 medium Carrots, peeled and sliced into rounds
  • 1 large Red bell pepper, cut into strips
  • 2 medium Zucchini, sliced into half moons
  • 0.5 cup Dried apricots, chopped
  • 1 can (15 ounces) Chickpeas, drained and rinsed
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Add the beef cubes in batches to avoid overcrowding. Brown on all sides, about 5 minutes per batch, then transfer to a plate.

Step 3

Reduce heat to medium and add the remaining tablespoon of olive oil.
