Ingredients

  • 1 lb lean ground beef
  • 2 tbsp olive oil
  • 2 cloves minced garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper
  • 1 cup cherry tomatoes
  • 0.5 cup red onion
  • 0.25 cup fresh parsley
  • 8 small whole wheat tortillas
  • 0.5 cup feta cheese
  • 0.5 cup tzatziki sauce
  • 1 lemon

Directions

Step 1

1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

2. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

3. Add the ground beef to the skillet, breaking it apart with a spoon, and cook until browned, about 8-10 minutes.

Step 4

4. Add cumin, coriander, salt, black pepper, and cayenne pepper to the beef. Stir well to combine spices with the meat.

Step 5

5. While the beef is cooking, dice the cherry tomatoes and red onion, and chop the fresh parsley.

Step 6

6. In a small bowl, combine the cherry tomatoes, red onion, and parsley to make a fresh salsa. Squeeze half a lemon over the mix and toss well.

Step 7

7. Heat the remaining 1 tablespoon of olive oil in a separate pan over medium heat.

Step 8

8. Lightly warm the whole wheat tortillas in the pan for about 30 seconds on each side.

Step 9

9. Assemble the tacos: fill each tortilla with a generous scoop of the seasoned beef.

Step 10

10. Top with fresh tomato-onion salsa and a sprinkle of feta cheese.

Step 11

11. Drizzle each taco with a spoonful of tzatziki sauce.

Step 12

12. Serve immediately with lemon wedges on the side for extra zest.
