Ingredients

  • 1000 grams baby potatoes
  • 60 ml extra-virgin olive oil
  • 4 units garlic cloves
  • 1 unit lemon
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Wash the baby potatoes thoroughly and cut each into halves.

Step 3

In a large mixing bowl, add the halved potatoes, drizzle with extra-virgin olive oil, and toss to coat evenly.

Step 4

Peel the garlic cloves and finely mince them. Add the minced garlic to the potatoes.

Step 5

Zest the lemon into the bowl with the potatoes, then slice the lemon in half and squeeze the juice into the bowl. Be sure to remove any seeds.

Step 6

Add the fresh rosemary and thyme to the bowl. Tear the leaves into smaller pieces to release more flavor.

Step 7

Season the potatoes with sea salt and freshly ground black pepper.

Step 8

Toss everything together until the potatoes are well coated with oil, garlic, herbs, and lemon.

Step 9

Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.

Step 10

Place the baking sheet in the preheated oven and roast the potatoes for 35-40 minutes, or until golden brown and crispy on the edges, stirring once halfway through cooking to ensure even roasting.

Step 11

Once done, remove from the oven and allow to cool slightly before serving.

Step 12

Serve warm as a side dish or part of a Mediterranean platter. Enjoy!
