Ingredients

  • 4 pieces white fish fillets (such as sea bass or cod)
  • 4 sheets banana leaves
  • 200 ml coconut milk
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 pieces garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 200 grams cherry tomatoes, halved

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Rinse the banana leaves under warm water to make them more pliable and pat them dry with a kitchen towel.

Step 3

In a small bowl, mix together coconut milk, olive oil, lemon juice, minced garlic, chopped parsley, chopped dill, sea salt, and black pepper.
