Ingredients

  • 500 grams lean ground beef
  • 3 cloves garlic, minced
  • 2 medium shallots, minced
  • 1 whole egg
  • 50 grams breadcrumbs
  • 1 teaspoon ground white pepper
  • 1 teaspoon salt
  • 1 liter beef broth
  • 1 large carrot, thinly sliced
  • 1 medium zucchini, sliced
  • 100 grams fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 stalks spring onions, chopped
  • 1 whole lemon, wedged for serving

Directions

Step 1

In a large bowl, combine lean ground beef, minced garlic, minced shallots, the whole egg, breadcrumbs, ground white pepper, and salt. Mix thoroughly until the ingredients are well combined.

Step 2

Take small amounts of the mixture and shape into small meatballs, approximately 2 cm in diameter. Set them aside on a plate.

Step 3

In a large pot, heat the olive oil over medium heat. Add the meatballs and brown them lightly on all sides, being careful not to overcrowd the pot. Remove the meatballs and set aside.

In the same pot, pour in the beef broth, stirring up any browned bits from the bottom. Bring to a simmer.
