Ingredients

  • 12 ounces Whole grain ziti pasta
  • 3 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 medium Red onion, diced
  • 1 medium Red bell pepper, diced
  • 1 medium Zucchini, sliced
  • 2 cups Cherry tomatoes, halved
  • 0.5 cup Kalamata olives, pitted and halved
  • 2 cups Baby spinach leaves
  • 1 cup Crumbled feta cheese
  • 1.5 teaspoons Dried oregano
  • 1.5 teaspoons Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded mozzarella cheese
  • 2.5 cups Tomato sauce

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the whole grain ziti pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet over medium heat, add 2 tablespoons of olive oil. Add the minced garlic and diced onion, sautéing until the onion becomes translucent, about 3-4 minutes.

Add the diced red bell pepper and sliced zucchini to the skillet, cooking until the vegetables are slightly tender, approximately 5 minutes.
