Ingredients

  • 250 grams Whole wheat pasta (penne or rigatoni)
  • 2 tablespoons Extra virgin olive oil
  • 2 cloves Garlic
  • 300 grams Cherry tomatoes
  • 100 grams Baby spinach
  • 50 grams Kalamata olives
  • 100 grams Feta cheese
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 large Eggs
  • 50 grams Grated Parmesan cheese
  • 10 leaves Fresh basil leaves

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the whole wheat pasta according to the package instructions until al dente. Drain and set aside.

Step 3

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the cherry tomatoes to the skillet and cook for about 5 minutes, until they start to break down and release their juices.

Stir in the baby spinach and cook until wilted, about 2 minutes. Remove the skillet from heat.

In a large mixing bowl, combine the cooked pasta, sautéed tomato and spinach mixture, Kalamata olives, crumbled feta cheese, dried oregano, salt, and black pepper. Mix well.
