Ingredients

  • 400 grams whole wheat pasta
  • 2 tablespoons olive oil

  • 200 grams cherry tomatoes
  • 3 cloves, minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 grams baby spinach
  • 100 grams, crumbled feta cheese
  • 150 grams, shredded mozzarella cheese
  • 10 grams, fresh, chopped basil
  • 1 tablespoon balsamic vinegar

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the diced red bell pepper, zucchini, and eggplant. Sauté for about 5-7 minutes until the vegetables begin to soften.
