Ingredients

  • 4 pieces White fish fillets (cod, halibut, or sea bass)
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 cloves Garlic cloves, minced
  • 1 cup Cherry tomatoes, halved
  • 1 medium Zucchini, sliced
  • 1 medium Red bell pepper, sliced
  • 1 medium Red onion, sliced
  • 0.5 cup Kalamata olives, pitted and sliced
  • 2 tablespoons Capers
  • 0.25 cup Fresh parsley, chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 whole Lemon, sliced for garnish

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the fish fillets in a shallow dish and drizzle with 1 tablespoon of olive oil and lemon juice. Allow them to marinate while you prepare the vegetables.
