Ingredients

  • 4 pieces cod fillets
  • 1 large zucchini
  • 1 large red bell pepper
  • 1 cup cherry tomatoes
  • 1 small red onion
  • 3 cloves garlic cloves
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the cod fillets under cool water and pat them dry with paper towels. Set aside.

Step 3

Slice the zucchini into half-moons, dice the red bell pepper, halve the cherry tomatoes, and slice the red onion thinly. Mince the garlic cloves.

In a large mixing bowl, add the zucchini, red bell pepper, cherry tomatoes, red onion, and garlic. Pour 2 tablespoons of olive oil, 1 tablespoon of lemon juice, lemon zest, oregano, thyme, salt, and black pepper over the vegetables. Toss until everything is well coated.
