Preheat your oven to 375°F (190°C).
Pound the chicken breasts between two sheets of plastic wrap to an even 1/4-inch thickness using a meat mallet or rolling pin.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add spinach and sauté for about 2 minutes until wilted, then remove from heat.
In a mixing bowl, combine the sautéed spinach, feta cheese, sun-dried tomatoes, olives, and garlic. Add half the salt and pepper, and stir well to combine.
