Ingredients

  • 500 grams boneless, skinless chicken thighs
  • 2 tablespoons extra virgin olive oil
  • 1 large onion, sliced
  • 1 large red bell pepper, sliced
  • 4 cloves garlic, minced
  • 4 tablespoons low-sodium soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons tomato paste
  • 1 cup water
  • 1 tablespoon honey
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and season lightly with salt and pepper.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and sear until golden brown on all sides, about 5 minutes. Remove the chicken from the skillet and set aside.
