  • 1 kg Lamb shoulder, deboned
  • 50 ml Olive oil

  • 1 tsp Paprika
  • 1 tsp Oregano, dried
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 150 g Greek yogurt
  • 2 tbsp Lemon juice
  • 2 medium Tomatoes, sliced
  • 1 medium Cucumber, sliced
  • 1 medium Red onion, sliced
  • 4 Flatbreads
  • 4 Lettuce leaves
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Begin by preparing the marinade for the lamb. In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, oregano, salt, black pepper, Greek yogurt, and lemon juice. Mix well to combine.

Step 2

Cut the lamb shoulder into thin slices, about 1/4 inch thick. Add them to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

Preheat your oven to 200°C (400°F). Thread the marinated lamb onto skewers, packing the slices tightly together.

Place the skewers on a baking tray and roast in the preheated oven for about 45-60 minutes, turning occasionally, until the lamb is cooked through and slightly charred at the edges.
