Ingredients

  • 1 bunch asparagus
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1.5 cups arborio rice
  • 0.5 cups white wine
  • 4 cups vegetable broth
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 0.5 cup Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Trim the woody ends of the asparagus and cut into 1-inch pieces. Set aside.

Step 2

Heat the vegetable broth in a saucepan over low heat and keep warm.

Step 3

In a large pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

Add minced garlic and cook for another 1 minute until fragrant.
