Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 14 ounces artichoke hearts
  • 1 cup cherry tomatoes
  • 0.5 cup kalamata olives
  • 2 cups fresh spinach
  • 2 tablespoons lemon juice
  • 3 cloves garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup feta cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Rinse and pat dry the chicken breasts. Season them with salt and black pepper.

In a large oven-safe skillet, heat the olive oil over medium-high heat.

Add the chicken breasts to the skillet and sear for 3 minutes on each side until golden brown. Remove them from the skillet and set aside.
