Ingredients

  • 4 medium Potatoes
  • 1 cup Chickpeas
  • 2 tablespoons Olive oil
  • 1 small Red onion
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 2 cloves Garlic cloves
  • 0.5 cup Plain yogurt
  • 0.5 Cucumber
  • 1 tablespoon Mint leaves

Directions

Step 1

Boil the potatoes in a pot until they are fork-tender. Drain and let them cool slightly before peeling.

While the potatoes are boiling, rinse and drain the chickpeas thoroughly.

In a large bowl, mash the boiled potatoes and chickpeas together until smooth.

Finely chop the red onion and parsley and add them to the mashed mixture.
