  • 1 large Onion, chopped
  • 3 Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 1 medium Red bell pepper, chopped
  • 2 medium Carrots, diced
  • 2 tablespoons Tomato paste
  • 1 cup Crushed tomatoes
  • 4 cups Low-sodium chicken broth
  • 0.5 cup Natural peanut butter
  • 0.25 teaspoon Cayenne pepper
  • 4 cups Fresh spinach
  • 0.25 cup Fresh cilantro, chopped
  • 1 Lime, cut into wedges

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Season the chicken thighs with salt and black pepper. Add them to the pot and brown on all sides, then remove and set aside.

In the same pot, add the chopped onion and sauté for 3-4 minutes until translucent.
