Ingredients

  • 1 cup couscous
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 medium red bell pepper

  • 1 cup cherry tomatoes
  • 0.5 medium red onion
  • 0.5 cup feta cheese
  • 0.25 cup kalamata olives
  • 0.25 cup fresh parsley
  • 2 tablespoons fresh mint
  • 1 medium lemon
  • 3 tablespoons extra virgin olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring 1 cup of water and 1 tablespoon of olive oil to a boil in a medium saucepan over medium-high heat.

Step 2

Stir in 1 cup of couscous, remove from heat, cover, and let it sit for 5 minutes until the water is absorbed.

Step 3

Fluff the couscous with a fork and let it cool to room temperature.

Meanwhile, dice the red bell pepper and cucumber into small cubes.
