Ingredients

  • 4 pieces (about 6 oz each) Cod fillets
  • 12 oz Penne pasta
  • 2 cups Cherry tomatoes
  • 1 cup (pitted and halved) Kalamata olives
  • 3 cups Baby spinach
  • 4 cloves (minced) Garlic cloves
  • 1 whole (zested and juiced) Lemon
  • 4 tbsp Extra virgin olive oil
  • 1 cup Dry white wine
  • 1 tsp Dried oregano
  • 0.5 tsp Red pepper flakes
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 0.5 cup (grated) Parmesan cheese
  • 2 tbsp (chopped) Fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

While the pasta cooks, preheat a large skillet over medium heat. Add 2 tablespoons of olive oil.

Season the cod fillets with salt, black pepper, and a pinch of dried oregano. Sear the fillets in the skillet for 3-4 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
