Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 2 cups baby Bella mushrooms, sliced
  • 0.5 cup dry white wine
  • 0.5 cup chicken broth
  • 1 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Prepare the chicken by patting the breasts dry with paper towels. Season both sides with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

Step 3

In the same skillet, lower the heat to medium and add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant.
