Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 0.5 cup pitted Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • 2 cups chicken broth
  • 8 ounces penne pasta, uncooked
  • 3 cups baby spinach
  • 0.5 cup feta cheese, crumbled

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Cut the chicken breasts into bite-sized pieces, sprinkle with salt and pepper, and add them to the skillet.

Step 3

Cook the chicken for 4-5 minutes, stirring occasionally, until lightly browned and cooked through. Remove the chicken from the skillet and set it aside.

In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
