  • 0.5 cup kalamata olives (pitted and halved)
  • 0.25 cup sun-dried tomatoes (chopped)
  • 2 tablespoons fresh parsley (finely chopped)
  • 1 whole lemon (zested and juiced)

Directions

Step 1

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Dredge the chicken lightly in the flour, shaking off any excess.

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Sear the chicken breasts for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
