Ingredients

  • 400 grams (1 can, drained and rinsed) Black beans
  • 250 grams Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 75 grams Kalamata olives
  • 75 grams Feta cheese
  • 2 tablespoons (chopped) Fresh parsley
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 clove (minced) Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cut the avocados in half, remove the pits, and dice the flesh into bite-sized pieces. Place them in a large mixing bowl.

Rinse and drain the black beans thoroughly, then add them to the bowl with the avocados.
