Ingredients

  • 6 slices bacon
  • 8 ounces breakfast sausage
  • 2 medium russet potatoes
  • 6 large eggs
  • 2 tablespoons milk
  • 1 cup shredded cheddar cheese
  • 1 medium green bell pepper
  • 1 small yellow onion
  • 2 stalks green onions
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Peel and dice the russet potatoes into small cubes. Dice the green bell pepper and yellow onion. Chop the green onions, separating the white and green parts.

Step 2

In a large skillet, cook the bacon over medium heat until crispy. Remove and transfer to a paper towel-lined plate. Once cooled, crumble the bacon into small pieces.

Step 3

In the same skillet, add the breakfast sausage, breaking it apart with a wooden spoon. Cook until browned, about 5-6 minutes. Remove from the skillet and set aside.
