  • 3 cloves garlic cloves, minced
  • 8 cups beef broth
  • 1 14.5-ounce can diced tomatoes, with juice
  • 0.75 cups pearl barley
  • 1 piece bay leaf
  • 0.5 teaspoons dried thyme
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large soup pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Season the stew beef with salt and pepper, then add it to the pot. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set it aside.
