  • 1 cup Breadcrumbs
  • 2 large Eggs
  • 1 cup Crushed pineapple (drained)
  • 0.25 cup Coconut milk
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 2 tablespoons Soy sauce
  • 1 teaspoon Lime zest
  • 2 tablespoons Brown sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Ketchup
  • 2 tablespoons Pineapple juice (reserved from the canned pineapple)
  • 2 tablespoons Chopped cilantro (for garnish, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, crushed pineapple, coconut milk, garlic, ginger, soy sauce, lime zest, brown sugar, salt, and black pepper.

Step 3

Use clean hands or a wooden spoon to thoroughly mix all ingredients until evenly combined, being careful not to overwork the mixture.

Step 4

Transfer the meat mixture into the prepared loaf pan and press it down gently to create an even surface.

Step 5

In a small bowl, whisk together the ketchup and reserved pineapple juice to make a glaze.

Step 6

Spread the glaze evenly over the top of the meatloaf using a spoon or pastry brush.

Step 7

Place the loaf pan in the preheated oven and bake for 55-60 minutes, or until the internal temperature reaches 160°F (70°C).

Step 8

Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 9

Optional: Garnish with chopped cilantro before serving for a fresh, tropical finish.
