Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 0.75 cups Italian-style breadcrumbs
  • 0.5 cups milk
  • 0.5 cups yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 eggs, lightly beaten
  • 1.5 tablespoons Worcestershire sauce
  • 1 teaspoons Dijon mustard
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 cups ketchup (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 1 teaspoons apple cider vinegar (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it for easier cleanup.

Step 2

In a large mixing bowl, combine the breadcrumbs and milk. Let the mixture sit for 2-3 minutes to allow the breadcrumbs to absorb the milk.

Step 3

Add the ground beef, chopped onion, minced garlic, parsley, eggs, Worcestershire sauce, Dijon mustard, salt, and black pepper to the breadcrumb mixture. Using your hands or a wooden spoon, gently mix until all the ingredients are just combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 4

Transfer the meat mixture to the prepared baking sheet or loaf pan and shape it into a loaf approximately 8 inches by 4 inches.

Step 5

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze. Spread about two-thirds of the glaze evenly over the top of the meatloaf, reserving the rest for later.

Step 6

Place the meatloaf in the preheated oven and bake for 50 minutes. Remove the meatloaf from the oven and spread the remaining glaze over the top.

Step 7

Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a meat thermometer.

Step 8

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute and ensures a moist meatloaf.

Step 9

Slice and serve warm with your favorite sides, such as mashed potatoes, green beans, or a simple salad.
