Ingredients

  • 2 pounds Ground beef (80/20 blend)
  • 0.5 pounds Ground pork
  • 1 cup Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup Ketchup
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar
  • 2 tablespoons Parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, chopped onion, garlic, breadcrumbs, milk, eggs, Worcestershire sauce, 1/4 cup of ketchup, dried thyme, salt, and black pepper. Mix gently with your hands or a spoon until just combined, being careful not to over-mix.

Step 3

Shape the meat mixture into a loaf shape on the prepared baking sheet or press it into a loaf pan.

Step 4

In a small bowl, whisk together the remaining ketchup (1/4 cup), brown sugar, and apple cider vinegar until smooth. Brush half of the glaze over the top of the meatloaf.

Step 5

Place the meatloaf in the preheated oven and bake for 45 minutes.

Step 6

After 45 minutes, remove the meatloaf from the oven and brush the remaining glaze over the top. Return to the oven and bake for an additional 30 minutes, or until the internal temperature reaches 160°F (71°C).

Step 7

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 8

Garnish with chopped parsley if desired, and serve warm with your favorite sides like mashed potatoes, green beans, or a fresh salad.
