Ingredients

  • 2 cups Cooked meatloaf
  • 4 Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 2 tablespoons Butter
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 2 tablespoons Chopped green onions
  • 0 Optional toppings (e.g., guacamole, jalapeños)

Directions

Step 1

If using leftover meatloaf, warm it up slightly in the microwave or on the stovetop until just heated through. Crumble or chop it into small pieces for easy spreading.

Step 2

Heat a large skillet over medium heat. Add 1/2 tablespoon of butter and let it melt, coating the surface of the skillet evenly.

Step 3

Place one flour tortilla in the skillet. Evenly spread 1/2 cup of shredded cheddar cheese on one half of the tortilla.

Step 4

Add 1/2 cup of crumbled meatloaf on top of the cheese, spreading it evenly. Sprinkle with an additional 1/2 cup of cheese on top of the meatloaf.

Step 5

Fold the empty half of the tortilla over the meatloaf and cheese to form a half-moon shape. Press gently with a spatula to ensure everything sticks together.

Step 6

Cook for 2-3 minutes on one side until golden brown and crispy. Flip carefully and cook the other side for an additional 2-3 minutes until the cheese is melted and the tortilla is crisp.

Step 7

Remove the quesadilla from the skillet and repeat steps 2-6 with the remaining tortillas, cheese, and meatloaf.

Step 8

Cut each quesadilla into wedges and serve immediately with sour cream, salsa, and optional toppings like chopped green onions, guacamole, or jalapeños.
