Ingredients

  • 1 lb Ground beef (85% lean)
  • 0.5 lb Ground pork
  • 0.5 cup Panko breadcrumbs
  • 0.25 cup Milk
  • 1 large Egg
  • 0.5 cup Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.25 cup Ketchup
  • 1 tbsp Worcestershire sauce
  • 0.5 tsp Dried thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Ketchup (for topping)
  • 1 tbsp Brown sugar
  • 1 tbsp Yellow mustard

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with nonstick spray or oil.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, panko breadcrumbs, milk, egg, onion, garlic, ketchup (1/4 cup), Worcestershire sauce, dried thyme, salt, and black pepper. Using clean hands, gently mix until just combined. Avoid overmixing, which can make the meatloaf tough.

Step 3

Divide the meat mixture evenly among the 12 muffin cups. Press the mixture gently into each cup, leveling the tops.

Step 4

In a small bowl, mix the 1/2 cup of ketchup, brown sugar, and yellow mustard until smooth. Spoon about a tablespoon of the topping mixture onto each meatloaf muffin and spread it evenly over the top.

Step 5

Bake in the preheated oven for 20-25 minutes, or until the internal temperature of the meatloaf muffins reaches 160°F (71°C).

Step 6

Remove the muffin tray from the oven and let the meatloaf muffins rest for 5 minutes before carefully removing them using a small spatula or fork.

Step 7

Serve warm with your favorite sides, such as mashed potatoes, steamed vegetables, or a fresh green salad.
