Ingredients

  • 4 oz ground beef (80% lean)
  • 2 tbsp panko breadcrumbs
  • 1 tbsp milk
  • 1 large egg yolk
  • 1 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • 0.5 tsp yellow mustard
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp ketchup (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a small baking sheet with parchment paper or lightly grease it.

Step 2

In a small mixing bowl, combine the panko breadcrumbs and milk. Let sit for 1-2 minutes to allow the breadcrumbs to absorb the milk.

Step 3

Add the ground beef, egg yolk, 1 tablespoon of ketchup, Worcestershire sauce, mustard, garlic powder, onion powder, salt, and black pepper to the breadcrumb mixture.

Step 4

Mix the ingredients gently with your hands or a fork until just combined. Avoid overmixing, as it can make the meatloaf dense.

Step 5

Shape the mixture into a small loaf (approximately 3-4 inches long) and place it on the prepared baking sheet.

Step 6

Spread 1 tablespoon of ketchup evenly over the top of the meatloaf as a glaze.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

Remove from the oven and let the meatloaf rest for 5 minutes before serving.

Step 9

Serve warm with your favorite sides, such as mashed potatoes or steamed vegetables, and enjoy!
