Ingredients

  • 2 pounds Ground beef (80/20 blend for best flavor)
  • 0.5 pounds Ground pork
  • 1 cup Breadcrumbs (preferably panko)
  • 0.5 cup Milk
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic, minced
  • 2 large Eggs
  • 0.25 cup Ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Paprika
  • 2 tablespoons Parsley, finely chopped (optional)
  • 0.5 cup Ketchup (for the glaze)
  • 2 tablespoons Brown sugar
  • 1 tablespoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper or foil for easy cleanup.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to allow the breadcrumbs to absorb the liquid.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, diced onion, minced garlic, eggs, ketchup, Worcestershire sauce, Dijon mustard, salt, black pepper, Italian seasoning, paprika, and parsley (if using).

Step 4

Mix the ingredients gently with your hands or a large spoon until just combined. Avoid overmixing, as it can result in a dense meatloaf.

Step 5

Transfer the meat mixture to the prepared baking sheet and shape it into a loaf approximately 9x5 inches in size.

Step 6

In a separate small bowl, mix together the ketchup, brown sugar, and apple cider vinegar to make the glaze.

Step 7

Spread half of the glaze evenly over the top of the meatloaf.

Step 8

Bake the meatloaf in the preheated oven for 45 minutes.

Step 9

Remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 10

Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute and makes slicing easier.

Step 11

Serve warm with your favorite sides, such as mashed potatoes and steamed vegetables.
