Ingredients

  • 6 medium potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cups milk
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 3 garlic cloves, minced
  • 1 cup frozen peas
  • 2 cups brown or green lentils, cooked and drained
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Directions

Step 1

Peel and chop the potatoes into large chunks. Place them in a large pot, cover with water, and add a pinch of salt. Boil for 15-20 minutes, or until the potatoes are fork-tender.

Step 2

Drain the potatoes and mash them with butter, milk, salt, and black pepper until smooth. Set aside.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

Heat olive oil in a large skillet over medium heat. Sauté the diced onion, carrots, and celery for 5-7 minutes, or until softened.

Step 5

Add the minced garlic and cook for another 1-2 minutes, until fragrant.

Step 6

Stir in the cooked lentils, vegetable broth, tomato paste, soy sauce, dried thyme, and dried rosemary. Mix well and let simmer for 5 minutes, allowing the flavors to meld. Stir in the frozen peas and cook for an additional 2 minutes.

Step 7

Transfer the lentil and vegetable mixture to a 9x13-inch baking dish. Spread it out evenly.

Step 8

Spoon the mashed potatoes over the lentil mixture and spread it out smoothly. Use a fork to create a decorative texture on top, if desired.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the mashed potatoes are lightly golden on the edges.

Step 10

Let the Meatless Shepherd's Pie cool for 5 minutes before serving. Enjoy!
