Ingredients

  • 12 oz Bowtie (farfalle) pasta
  • 2 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 3 Garlic cloves, minced
  • 8 oz White or cremini mushrooms, sliced
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 0.25 cup White wine or vegetable broth
  • 2 tbsp Fresh parsley, chopped
  • 4 oz Feta cheese, crumbled
  • 2 tbsp Parmesan cheese, grated (optional)
  • 1 tbsp Lemon juice

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the bowtie pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining, then set the pasta aside.

Step 2

In a large skillet, heat the olive oil and butter over medium heat until the butter melts. Add the minced garlic and sauté for 1 minute, or until fragrant.

Step 3

Add the sliced mushrooms to the skillet. Sprinkle with salt, black pepper, and optional crushed red pepper flakes. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are browned and tender.

Step 4

Deglaze the skillet by pouring in the white wine or vegetable broth. Stir gently to release any browned bits from the bottom of the skillet. Let it simmer for about 2 minutes to reduce slightly.

Step 5

Add the cooked bowtie pasta to the skillet with the mushrooms. Toss to coat the pasta evenly in the sauce, adding a splash of reserved pasta water if the mixture looks dry.

Step 6

Stir in the crumbled feta cheese, chopped parsley, and lemon juice. Mix everything together until the cheese is slightly melted and creamy.

Step 7

Taste and adjust seasoning with additional salt or pepper if needed. Optionally, garnish with grated Parmesan cheese before serving.

Step 8

Serve the pasta warm and enjoy a hearty, flavorful meatless meal!
