Ingredients

  • 500 grams Ground beef
  • 250 grams Ground pork
  • 60 grams Breadcrumbs
  • 1 large Egg
  • 3 Garlic cloves, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 120 grams Peanut butter (creamy or chunky)
  • 180 milliliters Coconut milk
  • 1 tablespoon Soy sauce (for sauce)
  • 1 teaspoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 tablespoon Brown sugar
  • 0.5 teaspoon Chili flakes (optional)
  • 2 tablespoons Water (if needed to thin sauce)
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, egg, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix until thoroughly combined but do not overwork the mixture.

Step 3

With damp hands, roll the mixture into small meatballs, approximately 1-inch in diameter, and place them on the prepared baking tray.

Step 4

Bake the meatballs in the preheated oven for 18-22 minutes, or until they are golden brown and cooked through.

Step 5

While the meatballs are baking, prepare the satay dipping sauce. In a small saucepan over medium heat, combine the peanut butter, coconut milk, soy sauce, fish sauce, lime juice, brown sugar, and chili flakes (if using).

Step 6

Whisk the sauce continuously as it heats to ensure a smooth texture. If the sauce is too thick, add water 1 tablespoon at a time until desired consistency is achieved. Simmer the sauce gently for 2-3 minutes, then remove from heat.

Step 7

Once the meatballs are cooked, transfer them to a serving dish and garnish with chopped fresh cilantro.

Step 8

Serve the meatballs warm with the satay dipping sauce on the side, either in individual bowls or a larger communal dish.
