Ingredients

  • 1 lb ground beef (80% lean)
  • 0.5 lb ground pork
  • 0.5 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup milk
  • 1 large eggs
  • 2 cloves minced garlic
  • 2 tbsp chopped parsley
  • 1 tsp dried Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 2 cups marinara sauce
  • 4 hoagie rolls or sandwich buns
  • 4 slices sliced mozzarella or provolone cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, grated Parmesan cheese, milk, egg, minced garlic, chopped parsley, Italian seasoning, salt, and black pepper.

Step 3

Mix the ingredients until well combined, but avoid overmixing to keep the mixture tender.

Step 4

For meatball subs: Using your hands or a small scoop, shape the mixture into golf ball-sized meatballs. For mini meatloaves: Shape into small rectangular loaves, about 3 inches long and 1.5 inches wide.

Step 5

Heat the olive oil in a large oven-safe skillet over medium heat. Add the meatballs or mini meatloaves and sear on all sides until browned, about 4-5 minutes. Work in batches if needed.

Step 6

Transfer the skillet to the preheated oven. If using a skillet that’s not oven-safe, transfer the meatballs or mini meatloaves to a greased baking dish.

Step 7

Bake for 20 minutes, or until the meatballs or mini meatloaves are cooked through (internal temperature should reach 160°F or 71°C).

Step 8

In the meantime, warm the marinara sauce in a saucepan over medium heat.

Step 9

Once the meatballs or mini meatloaves are done, remove them from the oven and pour the warmed marinara sauce over them in the skillet or baking dish.

Step 10

For meatball subs: Place 4-5 meatballs into each hoagie roll. Spoon additional marinara sauce over the meatballs, then top with a slice of mozzarella or provolone cheese. Toast the assembled subs in the oven for 5 minutes, or until the cheese is melted and bubbly.

Step 11

For mini meatloaves: Serve the mini meatloaves individually, spooning marinara sauce and cheese over the tops. Optionally, broil them for 2-3 minutes to melt and brown the cheese slightly.

Step 12

Garnish with extra parsley if desired and serve immediately.
