  • 2 stalks celery stalks, diced
  • 2 medium potatoes, cubed
  • 1 medium zucchini, sliced
  • 14.5 oz canned diced tomatoes
  • 6 cups beef broth
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, parmesan cheese, 1 minced garlic clove, egg, parsley, 0.5 tsp salt, and 0.25 tsp black pepper.

Step 2

Mix the meatball ingredients together thoroughly, then roll the mixture into small, 1-inch meatballs and set aside.

Step 3

In a large pot or Dutch oven, heat 2 tbsp of olive oil over medium heat. Add the meatballs in batches and cook until browned on all sides, about 5 minutes. Remove and set aside.

In the same pot, add the chopped onion, diced carrots, and diced celery. Sauté for 5 minutes until softened.
